The COOK&HOLD oven for Low Temperature cooking. The COOKING function (max. 120°C) allows for slow cooking, ensuring a very tender final product with no weight loss. Thanks to the integrated core probe, foods are cooked perfectly while retaining their organoleptic properties. The HOLD function ensures that food inside the cooking chamber is maintained at the ideal serving temperature. With Caldolux, it’s possible to create true Cooking and Holding stations, thanks to the ability to stack one module on another. Four integrated handles provide a high degree of portability and flexibility: it’s possible to Cook and Hold anywhere, also thanks to the 230V power supply. The digital panel is structured to allow the programming of a complete Cooking and Holding cycle, setting all necessary and required parameters.
